Spring has sprung at Messina and they’re celebrating in the most delicious way possible by releasing the Iced VoVo Bavarian cake, and dayum does it look good.

Inspired by the famous Australian bickie, the Iced VoVo Bavarian cake is made from a coconut biscuit base, layered with coconut bavarois, raspberry bavarois and raspberry jam, and finished off with raspberry marshmallow fondant and coconut shavings.

I think I got the sugar sweats just writing that.

Messina is known for their gelato, but to save this bad boy from melting outside the freezer and ruining your day, they’ve gone for a mousse instead of gelato which according to them, makes it suitable to eat at all temps.

“This scientific marvel of the foodie world can be eaten frozen or left out for a few hours and devoured as a mousse cake,” Messina wrote on their Instagram.

“Probably use a cooler bag though.”

By the way, if you’re wondering what a dinner party in the 80s was like, this cake pretty much sums it up. If you served this up to your parents today, they’d probably bust out a Whitney Houston cassette, put on some spandex and dance the night away.

The Iced VoVo Bavarian cake goes on sale Monday 26 September and will cost $38. Yeah, it’s a little on the expensive side but it’s defs worth it. The cake serves 6-8 people, but we won’t tell anyone if you keep it all to yourself.

Unfortunately, for those people living in WA and SA, there aren’t any Messina stores yet (RIP), so you’ll just have to get creative in the kitchen and make your own.
